I've been craving phat thai in a BIG way. This is what I just made:
Soak Thai rice noodles in hot water. Drop briefly into boiling water. Drain and set aside.
Mix:
nut butter (I used cashew - macadamia)
crushed garlic
curry powder
(uniodized) salt to taste
Warm some vegetable oil in a skillet. Add the curry paste and mix. Add the noodles and fry. Eat at the computer while drinking a Reed's™ Extra Ginger Brew.
It's not phat thai, but it's similar, it's filling, and it's GOOD!
