Note to Self

Among one's list of "things to do before mixing up a double batch of banana-nut bread batter because there are four overripe bananas on the banana hanger" would be "make sure you own loaf pans."

Muffin tins! But yes, also cake pans should work.

That would be a LOT of muffins! :-D And I have to leave for Helena in 2.5 hours.

Aw, yeah, the Helena thing puts a damper on the muffins. Because otherwise, man, you can never have too many banana muffins. Mmmmmmmmm...

I made my banana "bread" in a bundt cake pan. It seems more festive that way.

Now I'm craving banana bread. I may have to make some.

I just cut pieces for Eliza and myself. OMG. It is so good. Hot, with butter. And my house smells like banana bread (and vinegar because I've been washing windows, but mostly banana bread).

With a bit of clever folding you can make a one-time use loaf pan from aluminum foil. You can also use a saucepan or skillet if it has an oven safe handle.

Cake pan, pie tin, casserole dish, oven-safe skillet, pretty much ANYTHING will work.
